Heat olive oil or cooking spray in a nonstick skillet on medium heat. Whisk egg whites & fold in cheese. Pour egg mixture into skillet & scramble until desired consistency is reached. Serve with peanut butter on toast & cantaloupe.

Ingredients:

4 oz liquid egg whites

1 tsp. olive oil or non-stick cooking spray

½ oz fat-free mozzarella cheese

1 slice whole wheat bread

1 tsp. peanut butter

1 ½ cup cantaloupe
